Reserve a quarter of one of our pasture raised pigs for Fall 2020. 

 

This will be a mixed box of cuts equivalent in weight to a quarter of the pig--about 30-40lbs of pork. This is a great option for folks that don't have space in their freezer for a whole or half share, but still want to get our pasture-raised pork directly from our farm. 

 

NB. This deposit reserves your pig share--the final cost of a quarter pig share ranges from $350-$425, the remainder of which you'll pay when you receive your share. 

 

Below is an example of what a quarter-share looks like. If there is a particular cut you are excited about, we'll work with you to make sure you get cuts you're eager to have.

  • 3-4lb Shoulder Roast
  • 6-8lb Rib or Loin chops
  • 2lb Spare Ribs
  • ~4lb Bacon
  • 3lb ham
  • 9 lbs Sausage or Ground Pork
  • 1 Smoked Ham Hock (~2lb)
  • 3lb Fat, which is great for home-rendering and using in cornbread, roasted veggies, and frying up some eggs
  • 4lb Bones & Trotters, great for using in stocks

 

What's the total cost?

The total cost per pig varies from about $350 to $425, depending on the weight of the pig and the cures you select.

How do you arrive at the cost?

The cost is a combination of the hanging weight of the pig, plus the slaughter and butchery costs. The hanging weight of the pig is the weight of the pig after slaughter.

 

For quarter-shares, we charge $5.75/lb for the hanging weight of the pig, which is roughly 50lbs. So, the cost of the pig itself is about $290. 

 

The slaughter is $80 per pig, so $20/quarter, and the butchery and curing costs work out to between $60-$100 per pig.

 

So, $290  + $20 + $80 = $390.00

 

What is the volume of a quarter-pig share?

A quarter-pig share takes up around 1-1.5 cubic feet. A milkcrate is about 1 cubic foot.

 

When do I get it? 

Our pigs will be slaughtered and butchered in October 2020, and you'll get your meat in November, (specific dates will vary based on your location). We'll be in touch this summer to schedule pickup dates in Portland, Yachats, Eugene & Seattle.
